If you want to REALLY up the build, switch the motor to an industrial sewing machine motor and controller. My four wheel will vary in speed from 0 - 2,400 RPM's. When I grind knifes with it, I can slow it down to a couple hundred RPM's, both reducing heating problems and limiting how much material you take off your knives.
